Wash chicken and pat dry with paper towels.
Cut into 1-1/2 inch cubes and place in medium bowl.
Add oil, garlic, salt, pepper and onion powder. Toss to coat.
Cover tightly and refrigerate for at least 1 hour.
Prepare a very low fire in the grill or preheat broiler. (I have also baked it at 375-400 degrees.)
When ready to cook, add parsley and bread crumbs to the chicken and toss well until all pieces are thoroughly coated.
Divide chicken into 4 equal portions and thread on soaked skewers.
Pieces should be just touching, not smashed against each other.
To grill, cook over very low heat, turning occasionally, until chicken is thoroughly cooked and crumbs are lightly charred.
To broil, place the chicken on a cookie sheet and cook until browned, 8-10 minutes a side.
While the chicken is cooking, melt the butter and stir in the lemon juice.
When the chicken is finished, place on a platter and drizzle with lemon butter.
